1. Hope you all had a great 4th! My husband and I went to a baseball game and kept Amelia out way too late so she could see the fireworks after. She was not a fan. I guess it's hard to explain to a one year old that those loud noises and bright lights are good.
2. It never ceases to amaze me the positions that babies find comfortable when sleeping.
3. My husband taught Amelia to high five the other night. Now she'll randomly demand them throughout the day. It's pretty much adorable.
4. This baby was on sale and somehow jumped in my cart this week when I was grocery shopping. Anyone have any favorite eggplant recipes?

Yeah, I can't imagine how Amelia is comfy in that pic, heheeh. So sweet though.
I have the most DELICIOUS eggplant recipe for you that II've been meaning to post to the blog. You can find it here: http://www.epicurious.com/recipes/food/views/Eggplant-Salad-with-Dill-and-Garlic-237998
Oooh, that does look good Amy. I might have to find a couple more eggplants and give it a try. Thanks!
just a head's up...it has a LOT of prep and takes a little longer than i'd like. But I promise it's so worth it.
I love the picture of your daughter sleeping - I miss my daughter being that little! And eggplant is stinky - sorry! :D
I just love those pictures of Amelia. I miss those days when my boys were so young like that! It's sad how fast it goes. I've had a recipe pinned for eggplant parm sandwich from Hidden Fruits and Veggies that I really want to try! The link is here: http://www.hiddenfruitsandveggies.com/2013/03/06/eggplant-parmigiana-sandwiches/

I have been loving eggplant lately! My favorite way we've eaten it recently are these roll ups...almost like lasagna! http://www.thesweetslife.com/2013/06/eggplant-parmesan-rollatini.html
That looks delicious, Natalie!
