This recipe has been in our family for years and years but I never make it because of it's rather steep caloric count. Well this Christmas when we were throwing calories "to the wind" I kept craving this decadent treat, but of course my recipe was here at home while I was out in Utah for a month. So guess what was the first treat that I made when I got home, despite my 2 week hiatus from sugar? Yep Reese's Peanut Butter Cups, Only Better. The "Only Better" part is because ya know when you are endulging in a real Reese's Peanut Butter Cup and you wish so badly that there was more of the peanut butter filling? Well look no more, here is your recipe. The filling is nice and think and tastes just like a peanut butter cup. If you are one of those people that actually like MORE chocolate and less peanut butter, then just add 1 1/2 or 2 bags of chocolate chips!
Reese's Peanut Butter Cups (Only Better)
Published 01/23/2011Ingredients
- 1 1/2 cups graham cracker crumbs (I buy the store bought crushed but you can always crush your own graham crackers)
- 3 1/4 cups powdered sugar
- 1 1/2 cups creamy peanut butter
- 1 cup salted butter, melted
- 1 bag (12 oz) semi sweet chocolate chips
- 2 tablespoons butter*
Instructions
- Combine the graham cracker crumbs and the powdered sugar in a large bowl.
- Add the peanut butter and melted butter and mix well.
- Pour the mixture into a 9x13 pan and freeze for 20 minutes or until firm.
- While the peanut butter mixture is cooling, you can microwave or use a double boiler to melt your chocolate chips and 1-2 tablespoons of butter. I personally just throw the chips and butter in a microwaveable glass bowl and microwave 30 seconds on high, stir and repeat until they are melted. Works perfectly every time.
- Pour the chocolate over the peanut butter mixture and spread evenly. Put the bars in the fridge and when the chocolate is set take out and cut yourself a little piece, and then get ready to take a short jaunt to heaven!!
Prep Time:15 minutes
Cook time: 30 minutes (cooling time)
*Update (12/8/12) If you are having trouble with the chocolate layer on top being stiff or cracking when the bars are cut, you can add 1/3-1/2 cup warmed creamy peanut butter to the melted chocolate instead of the butter. This uses more peanut butter, but the end result is smoother.
Yum! I eating so many of these bars at your house one time that I'm a little embarrassed thinking about it. They are delicious!

The peanut butter mixture almost didn't make it into the freezer...I wanted to take a spoon and just eat it out of the bowl....but it was also worth the patience, because of course everything is better when you add some chocolate! ReplyDeleteReese's are my favorite and I remember making these years ago and using baking cups so they looked like a real Reese's. You could even use mini sized cups with this recipe. It was delicious.

ReplyDeleteWhat kind of a cracker is a Graham cracker? We don't get those in South Africa. We get a Cream cracker, which I think may be the equivalent, sort of plain, dry?? Thanx:) Would love to make these......
ReplyDeleteGraham crackers are slightly sweet, dry cookies. Something similar might be a plain digestive biscuit, if you can find those where you are. A graham cracker is a little bit drier and crumbles more easily, I think, but digestive biscuits might be the closest thing you can get.

ReplyDeleteI keep them in the refrigerator. They probably wouldn't go bad if you left them on the counter, but the peanut butter layer gets a little soft for my taste.

ReplyDeleteIt just makes the chocolate a little softer once it solidifies again. You could add margarine or even vegetable oil if you want.

ReplyDeleteI just found this page but the best thing I ever had was peanut butter balls or buckeyes they are great just roll access scraps into balls about 1 inch round then dip in melted semi sweet chocolate chips with one teaspoon crisco shortening using a double boiler till smooth and melted a double boiler is easy to make using a large pot add water to it about half full then take a large glass bowl place on top bring water to boil add chips to glass bowl then add the Crisco heat till melted it will become shiny reduce heat once it is done to keep it melted roll each peanut butter ball in the chocolate place in fridge till chocolate is hardened it is delicious. To make actual peanut butter balls use one jar peanut butter crunchy or smooth your choice about 2 cups powdered sugar, softened butter about two tablespoons you can use the kind that comes in tubs so that it's already soft I did and it tasted great, one teaspoon vanilla extract combine all ingredients till mixed thoroughly then roll into 1 inch balls using a tooth pic pick up each ball and dip them in chocolate one at a time for buckeyes cover all but top of ball leaving a circle at the top or just completely cover them in chocolate then once they are all dipped and plated on waxed paper place in fridge it also helps to place the balls in fridge before dipping so that they harden up enough to poke with a tooth pic. Once they are set enjoy they are the best. Better than Reeses cups.

i found this too thru pinterest - looks delicious. i did note on the pin that these are not sugar free and definately not 55 cal each - at least not the portion size as shown so there hopefully no further confusion. did note as well that the recipe sounded amazing and looked delicious! i think these will be on my holiday table this year. thanks!

Pesky little pinners : ) Although you could make them with sugar free or low sugar cookies, (or maybe rice chex would work) and use agave nectar instead of the powdered sugar. And then melt sugar free chocolates on top. Although even that would have a ton of calories. Although all of these substitutions seem like I'd wind up on pintrosity!

ReplyDeleteWarning you now, that will actually be more work for you. I've made my version of these a million times and all different ways and cupcake tins would take even longer. Try my version with milk choc and they will be super easy to cut!
DeleteI make a version of these that taste more like the real thing. I only do about 1/2 the recipe in a 9x9 pan and line the bottom with parchment. I also use milk choc chips, that's why they taste more like Reese's. I spread 1/2 of the choc on the parchment then chill for 10 min and then spread the PB filling and then the rest of the choc on that and chill once again for 10 min. Way easier to cut and taste waaaaaay better! Try em!

Whoever pinned must have just glanced through your recipe and didn't see just plain old sugar so that's what they put! Anyway, can't wait to try this recipe! I agree Sunbutter (from sunflower oil) is a good substitute! It sounds similar to the peanut butter balls we used to make except maybe less work since you don't have to roll them and then dip.

Only change I made was to make them in little mini-mini-cupcake type liners to make 'em bite-sized. Which also means I don't *actually* know how much of the batch I've eaten...ahem.

I came and checked because I have a pb cup recipe I have used for years and it is wonderful but I couldn't see where it would be no sugar unless it is artificial sweetner or something equally yuck.
"NO SUGAR WHATSOEVER"... except there is powdered sugar, chocolate chips, and graham crackers.... plenty of sugar here.

ReplyDeleteAlthough I am a health nut (I saw "no sugar, 55 calories a serving" on Pinterest, realize that that is not the case, oh well!), my boyfriend is definitely not a health nut and I think I'll make these for him for Valentine's Day using heart-shaped cookie cutters! They sound delicious!

I also have to say, as someone with a Masters in plant genetics and who has worked on responsibly engineering plants to reduce pesticide use and invasiveness, that although I enjoy my GMOs in graham cracker form, I really prefer them in cake or cookie form.

ReplyDeleteI am deathly allergic to peanuts and my husband gave all nuts up when we first started dating. The one thing he always talks about is resses pieces cups, so I am going to try making these with "wow butter". Its a soy butter that apparently tastes just like peanut butter. I will let you know how it turns out!
